Ladies && Gents, I have not been posting enough recipes (mostly because we have been living off of pizza rolls && take out because I was working all day) But rejoice because I have a great quick recipe that is suburbbbbb.
Ingredients:
Salmon (Fresh or frozen)
Eggs (one egg per fillet should do it)
Choice of veggies ( I used peppers && onion)
Bread crumbs
Flour
Extra virgin olive oil
Lemon pepper
Grated parm (Optional)
Steps:
1. If fish is frozen thaw it in the microwave OR in the fridge a few hours in advanced.
2. Get everything ready for breading your fish, Eggs in one bowl, flour in the next bowl, && in the third bowl mix your spices,bread crumbs, && parm if you're using it.
3. Bread your fish. Dip in egg first, then flour, then breading mix. Repeat once or twice for crispier coating.
4. Toss into a greased pan (use oil or butter) && cook for 7 minutes on one side && 2 minutes on the other side at 425 degrees. (if you flip half way through it results in dry fish, Highly suggest the time above)
5. While the fish is in the oven cut up your veggies && saute them in a medium sauce pan on high in oil with your choice of spices (in my case I used the cracked lemon pepper && salt)
Once the fish is out of the oven your veggies should be ready. Plate && enjoy your meal.
